The “Big Five Theory”

Chef Rick Moonen is the owner and executive chef of the famous RM Seafood in Las Vegas and also the author of the book “Fish without a Doubt”.

5@5 is a list of food-related from famous chefs, writers, musicians, and all other people from around the globe who is passionately in love with cooking.

5@5 means for a “Big Five Theory” according to Moonen. Most restaurants only serve five groups of fish such as bass, snapper, tuna, salmon and cod. The “Big Five Theory” typically give the usual five groups of fish a break by providing a substitute but still a seafood.
